Cheesy Cauliflower Breadsticks

A low carb way to have a tasty snack

I’m ALWAYS on the hunt to try easy and delicious low carb snack foods. I found this recipe online at poshinprogress and decided to give it ol’ college try. I don’t miss bread but I do sometimes miss scraping the extra bits of marinara sauce from my plate with some garlic bread sticks. Overall, the recipe was simple and easy to make and tasted pretty stickin’ good too if I do say so myself. I’m convinced the only reason Tom wouldn’t try it is because he watched me make it and knew vegetables were a HUGE part of these tasty suckers.

I found I added more seasoning powder because I am not particularly one for cauliflower or sweet potatoes plains but use your own tastebuds as your guide. Ready? Let’s go!

Here’s what you need!

  • 1 bag of Green Giant riced Cauliflower (2 net carbs)

• 1/2 teaspoon dried Italian seasoning

• 1/4 teaspoon each of garlic and onion powder

• 2 large eggs, beaten

• 1 cup shredded Cheddar and 1 Cup of Mozzarella cheese (about 8 ounces total)

• 1 cup shredded Parmesan (about 5 ounces)

• Kosher salt and freshly ground black pepper

• Marinara sauce, for dipping

Directions

• Preheat the oven to 475 degrees F. Line a rimmed baking sheet with parchment and coat with cooking spray.

• Prepare your riced cauliflower by making sure it’s thawed before transferring the cauliflower mixture to a large bowl. Add the Italian seasoning, garlic and onion powder, eggs, 1 cup Cheddar and Mozzarella cheeses, 1/2 cup Parmesan, 1/2 teaspoon salt and a few dashes of pepper and combine until the mixture holds together when squeezed.

• Spread the cauliflower mixture into an 8-by-12-inch rectangle about a 1/4 inch thick on the prepared baking sheet. Use the straight edge of the parchment as your guide to keep the cauliflower mixture edges straight too. Bake until the crust turns golden brown all over, 18 to 20 minutes.

• Remove the baking sheet from the oven and lay another piece of parchment on top of the crust. Fit a second rimmed baking sheet on top so the bottom of the baking sheet is touching the parchment. Using oven mitts, hold the 2 baking sheets together and flip them over so the crust is now on the parchment on the upside-down baking sheet. Remove the first parchment from the crust, cut the crust into 1 1/2-inch-thick strips (you should have 8 to 9 strips) and spread them apart a little. Sprinkle with the remaining 1 cup Cheddar and 1/2 cup Parmesan. Bake on the upside-down baking sheet until the cheese is melted and turning brown in spots and the visible crust is a deep golden brown, 8 to 10 minutes.

• Let cool for 5 minutes, then transfer the sticks on the parchment to a serving plate and serve with the marinara sauce for dipping.

I personally enjoyed this recipe, having taken the original and modified it to suit my needs. The original included riced sweet potatoes which I omitted because I like to keep my carb relatively count low with the exception of one day a week where I’ll treat myself to a half of a small plastic cup of Breyers carb smart ice cream with whipped cream-I know I’m such a rebel! Fly Super Cam Fly

If it hasn’t been abundantly clear I’ve been obsessed with my Carolina Panthers since their inaugural season in 1995 I don’t know what else I can do or say to prove it. I sketched this on the app ‘MyBrushes’ after the Panthers victory of the Eagles in 2012. I’ve always been a huge supporter of Cam Newton from the moment we drafted him. The antics which annoy the masses, amuse me, the guy has FUN doing his job and I truly love that about it. Maybe it’s a Taurus thing? (We’re only 9 days apart, both May babies) Basically I support him no matter what.

I’ve sketched A LOT of Cam Newton, some could argue it’s because he’s my favorite Panthers player to sketch, but I can assure you this is not just because he’s one of my favorite Panthers of all time, he’s photogenic! Sketching Cam is like sketching pure joy to see someone having fun as well as success in the NFL is a beautiful sight to behold. Sketching Cam’s joy is contagious, I feel bubbly and happy too when I sketch him. Looking back on this sketch, I can’t help but be hype for this upcoming season.

Ravenna (2012)

I remember watching Snow White and The Huntsman and being totally drawn in by Charlize Theron’s portrayal of Queen Ravenna. I used the app ‘MyBrushes’ a lot before it was unsupported by the new iPhone 7. There were a lot of brushes to choose from so I sketched it first then added the dimensions of color and contour with an assortment of sizes and textures brushes. I used an image to look at on my iPad as I drew this piece with a stylus on ‘MyBrushes’ for reference and I’m quite proud of how it came out to this day and I sketched this in 2012. For me, sketching has helped me deal with my anxiety and occupy my mind with more relaxing means to help me sleep at night. This piece is no exception.

Caribbean Twilights

Snow. I’m tired of hearing about it, I’m tired of seeing it and I’m tired of the weather being cold enough to produce it. After three nor’easters, and two major snowstorms I am dreaming of beaches and flip flops and I really don’t care who knows it. That’s what inspired this artistic creation of mine. I used warm tones orange, black, pink and yellow as well as red and burgundy tones. The palm tree sitting low on the beach overlooking the ocean and sunset represent both warmth and relaxation. I forget what it’s like to not freeze my tushy off every time I stepped outside to start my car. This piece represents for me a hope for, at this point, skip the spring and give me summer!

An bhfuil Gaeilge agat?

‘Do you speak Irish?’

They say everybody is Irish on St. Patrick’s Day, and while this may be true I am proud to be Irish American everyday. You may have heard an “Erin go bragh” or even a “sláinte” or two in bars on St. Patrick’s Day, but even on the most Irish of holidays, we don’t hear much of the Irish language—which is a shame! I remember hearing stories growing up from my Grammy about how both sets of her grandparents and even her own Mother spoke fluent Irish. I remember her telling me how whenever her mother and aunts did not want the children to understand what they were talking about they would speak Irish. I remember asking my grandmother many things about our Irish heritage and she would tell me about the currency, the Irish national anthem, heck she could even recall in vivid detail what the Killarney country side looked like, but when I asked her if she could recall anything in the Irish language the answer was always a firm no.

I remember asking my grandmother why this was the case, after all my best friend’s grandmother spoke Polish and she knew some words and taught them to her children and grandchildren. I remember being no more than 14 or 15 and totally confused as to why we did not have such a vital piece of our heritage passed on. The answer I received was both sad and honest. When my great grandparents immigrated to the United States they felt the only language their children and grandchildren needed to know was English and so the ability to fluently converse in the language of our ancestors died with my Great Grandma in 1948. Why is this the case that even in Ireland most Irish people have forgotten the language? The story is also very sad but very honest and here it is.

Like a good portion of Irish history, the English can be blamed. For most of Irish history, the English ruled Ireland, but the language only really began to decline after 1600, when the last of the Gaelic chieftains were defeated. In my looking into the bigger picture, I have never once found that the Irish language was banned or persecuted but I did see how it was discouraged. It was discouraged by allowing English to be the official language of rule and business. It was discouraged by allowing no room to support the Irish language and culture.

Interestingly enough, while the English language slowly spread and took root in places like East Ireland and Dublin, the Irish language held a stronghold in the West in areas like Valentia Island where my Great Grandma was born and raised. By 1800, Ireland was split nearly down the middle between the two languages.

Had two major events not happened we probably would have a lot more fluent Irish speakers but they did so that’s how a slow decline in Irish speakers came to be. The first, I’m sure you’ve heard of at least once in world history, was the Great Potato Famine (1845-50) which hit the Irish speaking West hardest of all. Out of a population of 8 million, roughly 1 million people died and another million immigrated. From then on immigration became a common part of Irish society as huge numbers of Irish left the country every year, primarily to English speaking countries like Britain and America. This meant that most Irish people needed to speak English in the likely event that they would leave home. Irish would be no good to them in America, English was a necessity. English was the language of the future and of economic opportunity; Irish was the past and the language of a poverty stricken island that couldn’t support them.

The second major event was the advent of education. Starting in the 1830s national schools were created across Ireland to educate people through English and Irish was strictly forbidden. While nothing could be done to prevent Irish from being spoken in the home, it was strongly discouraged and shamed. Irish was depicted as an ignorant peasant’s language, whereas English was the language of sophistication and wealth. Poor potato farmers spoke Irish, while rich and successful businessmen spoke English (I teared up just a little writing that attitude of the time). So that is what allowed English to become the language of the cities while Irish language, unwanted and looked down upon, retreated to the most remote and underdeveloped parts of the country.

It was with this attitude, both sets of my great-grandparents came to America and did not bother to teach their children the language they spoke back in the old country. Living in America afforded my grandparents and their siblings (as well as future generations) a strong education and better job opportunities BUT they also were deprived of knowing a crucial part of their heritage. I do not blame my Great Grandparents, they believed the only language their children would need to know is English, but I do get wistful when I see a young woman and her elderly Grandmother conversing in Spanish that I was never given the opportunity to speak in such a beautiful language.

My Grammy would’ve been 100 years old on May 2nd. In her memory, I have decided to do one of two things and one of them is to learn the Irish language. For me, it would be an honor to go to Ireland one day and be able to speak in Irish to the people there to gain a part of my heritage back that was once shamed and thought of as an uneducated language to speak. I am always very proud of my Irish roots even when St. Patrick’s Day is past, I want to honor my Irish heritage by learning a language that has both fascinated and made me sad when I think of just how many people were discouraged from speaking it. When you think about it, if you go to France you can hear people speaking French, if you go to Italy you can hear people speaking Italian but if you go to Ireland you hear people speak English. Today, only 1% of the Irish population speaks Irish exclusively, only 7% speak both Irish and English fluently and the rest of the population speaks English with the exception of a few words and curses they may know in Irish. This is very sad.

While there are many debates that the Irish language is dying, I think it is up to all of us even those of us who are not in Ireland to learn the language to keep the language going. Languages continue to live when people communicate in them in the real world. In 2005 Irish was recognized as an official EU language but it has a long way to go in giving this language the recognition it needs.

My goal for 2019 and beyond is to really immerse myself in the Irish language, I want to speak it one day as well as I speak my own language. I want to know it, I want to speak it, and I want to write it, because I am proud of it.

Recipe of the Week

Spaghetti Squash Eggplant Lasagna

As I’m sure it is very evident in the last couple of posts, I am committed to the Akins way of life but I am also still a foodie at heart. That is why last Saturday when I was looking for a way to reward myself for losing over 29 pounds since the end of November I decided to create a dish that marries the flavors of my eggplant lasagna and add some spaghetti squash in for added veggie serving. I’m not 100% sure of the exact carb count but I know it is made with all Akins friendly things and definitely a low carb solution to the traditional lasagna.

I am very conscious of what I put in my body now so much that I can honestly say who I was a year ago is not the same person I am today and will be going forward. For me Atkins is a lifestyle, I have a lot of gluten sensitivities as well as sinus sensitivities which manifest themselves more pronouncedly when I eat high carbohydrates. This recipe is very time-consuming it takes about an hour and 15 minutes at least from start to finish but the prep is relatively easy and it’s so worth it when you take your first delicious bite.

So without further ado, I’ll get right to what you came here for, the recipe of course! Now my husband and I do not have kids but I’m going to say this is a fun way to get your kids to eat vegetables, spaghetti squash is very delicious and doesn’t really taste like anything so with the right amount of marinara sauce you can trick your kids into eating something that’s relatively healthy without them realizing it which is always a plus! Spaghetti squash is also very versatile and can be eaten hot or cold and in a wide variety of ways. Before you get started it’s important to understand that spaghetti squash is liable to get soggy if it’s overly drenched in sauce so a little bit definitely goes a long way!

Here’s what you’ll need:

  • 1 spaghetti squash
  • 1 small eggplant
  • Marinara sauce (I used my Father in Law’s super secret recipe)
  • 1 12 oz container of Ricotta cheese (I used Shop Rite Brand)
  • Salt
  • Olive Oil
  • Pepper
  • Onion Powder
  • Garlic Powder
  • Pre Shredded Mozzarella Cheese

Got it all? Great let’s get started!

  1. Cut your spaghetti squash lengthwise in half. This can be a pain in the butt so I had Tom help me with that!
  2. Scoop out the squash seeds and other unnecessary insides, you’re not going to need them.
  3. Season your squash with garlic powder, onion powder and a pinch of salt and pepper.
  4. Preheat your oven to 375, throw your squash (open halves facing down) on a non stick surface of a baking sheet and bake for 45 minutes.
  5. While your squash is cooking, slice up one small eggplant crosswise (about 3/4 inch slices).
  6. Sprinkle olive oil, salt and garlic powder on both sides of your eggplant slices and let sit till your squash is ready.
  7. Once your squash is ready, take it out of the oven and let cool. Next, you are going focus your eggplant by placing it onto a nonstick baking sheet and cooking them for 10 minutes.
  8. While your eggplant is cooking flip over the spaghetti squash halves and check to see if it is fork tender. Fork tender means that you are able to scrape the inside of it out and get a spaghetti type consistency of squash.
  9. Scrape both halves of your spaghetti squash into a large bowl. You do not have to use all of it in your dish you can store whatever you would want to eat on another night in a separate container or if you wanted to make a large amount of the dish you can use it all, I opted to use both halves in my dish.
  10. Once your eggplant is ready, now the fun part begins! Place a thin layer of marinara sauce, a thin layer of ricotta cheese, and sprinkle a generous helping of mozzarella cheese on the top of your eggplant and put back in the oven to bake for another 10 minutes or until cheese is melted.
  11. Once your eggplant is ready you’re ready to start the lasagna part! In a casserole dish place a thin layer of marinara sauce followed by a helping of spaghetti squash, a thin layer of ricotta cheese, eggplant slices, and mozzarella cheese. Follow this pattern until you have used all of the squash and eggplant. Sauce, Squash, Ricotta, Eggplant, and cheese. Sprinkle what is left of your mozzarella cheese on top of the dish.
  12. Cover your casserole dish and place in the oven to cook for 15 minutes.
  13. Uncover and bake again for 10 more minutes.

Let your dish sit for 2 minutes to cool and before you know it you’ll be on your way to having a nice romantic dinner for two…or more! Pour yourself some champagne or wine, light some candles and enjoy your meal while watching Talladega Nights.

5 Things…

That may not be a big deal to you but are a big deal to Panther fans…

As a Panthers fan, there is territory that in polite conversation you don’t want anybody to ever mention to you. You may think you are being funny, or it’s not a big deal to mention said things, however, let me assure you that the following five things are a very big deal and offensive to Panther fans. What are those five things you may wonder? Let’s start with number one:

1. Bashing Cam Newton: If you ever want to take your life into your own hands just trash Cam Newton to a Panthers fan. Not only will we chew you up and spit you out we’ll do it in the most classy way possible cause bless your heart that’s how we roll. Understand that Cam Newton is mightier then the hammer of Thor to us and you must respect that or stay out of our mentions.

2. Bringing Up The Departure of Steve Smith: You know that Katy Perry song, ‘The One That Got Away’ ? That’s kind of how every Panther fan (including me) feels about Steve Smith’s dismissal from the team. He was a fan favorite from his explosive performances to his unfiltered responses. I can still eat a pint of Ben&Jerry’s Chocolate Chip Cookie Dough ice cream and cry for hours when I think about how his career with us ended. We are still loyal to our beloved Agent 89, so if you talk trash you’re liable to get a southern style attitude adjustment.

3. Defending Mike Shula: Thankfully this off-season Mike Shula was relieved of his offensive coordinator duties, however, if you’re thinking about defending the former man in charge of our offense you are likely to spark a heated debate with any Panthers fan within a 1000 mile radius of the BOA (Bank of America Stadium for all you non Panther fans). Blaming the receivers and Cam for offensive blunders is likely to get you blocked by a fair portion of us on Twitter. Just don’t do it!

4. Talking About Super Bowls 38 & 50 and How We Lost Both: Once again you are taking your life into your own hands if you think for one minute bringing these games up and mocking the fact that we don’t have any Super Bowl championships or rings is cute or funny to a Panthers fan cause it’s not. We are aware that we lost the big game twice and it is still a sore spot for many of us, in fact, many of us still root against the Patriots and Broncos no matter who they are playing because of those losses. Just because we have not won a Super Bowl yet does not mean that we never will or that we are not relevant because I can tell you I know one day we will win it and I know that we will stay relevant until we do and beyond that.

5. Calling Thomas Davis A Dirty Player: Thomas Davis is one of the most classiest human beings to ever walk this earth both on and off the field. After a rather nasty hit he gave DeVonte Adams a lot of Twitter erupted into calling Davis ‘dirty’. I don’t think a full 5 seconds eclipsed before we in Panther Nation rose to defend our Man of The Year’s honor. Once again, you can’t trash Davis without repercussions.

So there you have it five things we Panthers fans do not appreciate you bringing up in polite conversation. If you know a Panthers fan please share this article with them, if you are a Panthers fan please like and share this article anyway.

Recipe of The Week

So this week I tried Tasha Metcalf’s Fat Head Pizza Rolls and here’s what I thought…

As many of you may remember from my first blog with the egg plant lasagna, I also do an eggplant pizzas type dish in which I substitute English muffins with eggplant to create mini pizzas. If I’m truly honest with you I would say the hardest part of any low-carb diet is not eating pizza, what sane human being does not love pizza? But of course sometimes even eggplant doesn’t cut it which is why I was looking for the best kind of substitute to cure my pizza cravings. My brother-in-law makes his famous pizza rolls and the thought of never having something as delicious as that again was kind of disheartening, but like in any instance where I’m faced with a decision I try to make the best one for my body. I scoured the Internet and tried many recipes but so far only one lived up to my expectations Tasha Metcalf’s Fat Head Pizza rolls.

The best part was even my husband who is extremely picky when it comes to foods enjoyed this recipe and I’d like to share it with you!

What you’ll need for the dough:

  • 1.5 cups of Shop Rite pre shredded mozzarella cheese
  • 2 tablespoons of cream cheese (I used Philadelphia Cream Cheese)
  • 3/4 Cup of Almond Flour
  • 1 Large Egg
  • 1/2 teaspoon of garlic power
  • I also added like a pinch of Italian seasoning to mine even though the recipe doesn’t call for it. Literally a pinch.

What You’ll Need For The Filling:

  • 2 tablespoons of Hunt’s Pizza sauce (Hunt’s is the lowest carb pizza sauce I found)
  • Shredded Mozzarella cheese put as much as you’d like I’m obsessed with cheese so I used quite a bit!
  • Pepperoni, minced
  • Bacon, minced

**the recipe called for black olives and salami which my husband isn’t too fond of so I omitted them and replaced them with bacon**

I got the stuff, now what???

1 For the dough, melt the 2 cups shredded mozzarella with the cream cheese on the stove top until combined well or in the microwave for 2 minutes.

2 Stir in the remaining dough ingredients. Wet your hands and mix together as best you can to form a dough.

3 Roll between two pieces of parchment paper to the size of 8 by 16 inches.

4 Preheat the oven to 400 degrees F.

5 Spread 1/2 cup sauce over the dough. Lay the sliced mozzarella over the sauce. Spread out the slices of pepperoni and bacon.

6 Roll up and cut roll in half. Then slice 12 pieces.

7 Lightly spray an 8 inch pie dish with olive oil cooking spray and place the rolls in the pan. Top with remaining sauce.

8 Bake for 25-30 minutes or until browned on the edges.

9 Allow to cool for about 10 minutes or you won’t be able to pick them up as they will be too cheesy.

My rating of this recipe: 5/5 stars

While the crust was a little tricky and time consuming the taste is well worth the time and effort you put into making this dish, I give Tasha a lot of props for coming up with a classic that even pleased by picky husband.

Recipe of the Week

I tried Carolyn from ‘All Day I Dream of Food’s Recipe for Low Carb and Gluten Free Pigs in a blanket and he’s what I thought…

My husband and I work opposite shifts I work days and he works nights so quite often dinner is a quiet affair we have during his 45 minute break. I need our meals to be meaningful and also supportive of my healthy lifestyle change. I am a huge foodie and especially in the summertime nothing hits the spot like a hotdog on a warm bun,however, since I started Atkins again I’ve got to be mindful of carb count as well as the gluten allergy I realized I have.

So far I have lost 29 pounds in changing the way that I eat so I’m very picky when it comes to finding recipes which I don’t mind putting into my body. That’s when I came across the blog ‘all day long I dream of food’ and I found a lot of nifty recipes I would like to try particularly this one which I did try. In fact, they were so delicious I wasn’t even able to post my own picture we scoffed them down before I thought of it so I hope she doesn’t mind that I used the picture from the site I got the recipe off of. Once again this recipe is not mine but when I get excited about a recipe that I really enjoy I like to share it with all of you! So without further ado here is the low carb/ gluten free pigs in a blanket curtesy of Carolyn.

What you’ll need:

  • I used a large 12 pack of Nathan’s Hot Dogs.
  • 3 oz of cheddar cheese sliced thinly into matchstick like shapes.
  • 2 cups of almond flour (this will help you make the blanket part of the pigs in a blanket)
  • 3 tablespoon of whey protein powder (unflavored)
  • 2 tablespoons of coconut flour
  • 2teaspoons of baking powder
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/2 teaspoon xanthan gum
  • 2 large eggs, lightly beaten
  • 1/4 cup plus one tablespoon of melted butter

Got it…so what do I do next?!

I followed this recipe the very way it was laid out in Carolyn’s blog and it turned out amazing so here’s what you do:

1 With a sharp knife, make a slit in each hot dog from end to end, without cutting all the way through.

2 Fill slit with matchsticks of cheddar cheese.

3 Preheat oven to 350F and lightly and line a baking sheet with tin foil and spray a non- sticking spray also.

4 In a large bowl, whisk together the baking powder, almond flour, whey protein, coconut flour, garlic powder, salt and xanthan gum.

5 Stir in those eggs and 1/4 cup butter until dough comes together. Be prepared for massive stickiness!

6 Turn out dough onto a large piece parchment, and then pat into a rough rectangle.

7 Top with another piece of parchment and roll out to 1/4 inch thickness (about 12 inches by 12 inches). Peel off top piece of parchment paper.

8 Cut into 12 squares, if using regular hot dogs, or 26 small squares if using mini dogs (if your squares aren’t perfectly even or have some ragged edges, that’s okay…and you can gather up extra dough and re-roll as well).

9 Place each hot dog in the middle of a square and roll dough tightly around it. Transfer to prepared baking sheet.

10 Brush dough with remaining tbsp butter. Bake 20 minutes, until dough is light golden brown and cheese is melted.

11 To reheat, just place in a 250F oven for 8 to 10 minutes.

Tom and I really enjoyed this recipe it was really easy to make and very enjoyable for us to eat. This is the kind of meal you pair with a nice glass of champagne or even sparkling seltzer. For a couple who works opposite shifts and really values their dinner time it’s a great meal to just sit and enjoy while enjoying each other.

I Rate This Recipe: 4/5 stars because the crust part is messy and a little time consuming.

Like A Drop In The Ocean

About This Piece and Why I Created it: We are all nothing more than drops in the ocean but collectively we are an ocean. If we spread love we will send shockwaves of love throughout the world. This piece was inspired by the need to promote unity, love and acceptance in a very divided country. If you look closely you’ll see all the colors of the American flag included in this painting Red, White and Blue. The Red represents the blood, sweat and tears that went into making America what its become. The White represents the diverse people coming together as one and surrendering to peace and understanding of everyone’s unique individual opinions and needs. The Blue represents people and law enforcement working hand and hand to make our communities safe and compassionate. Together these “drops” make an ocean of pure respect, love and tranquility.
